Canéderli (or Knödel in German) are meatballs made with stale bread and speck, served dry or in broth. There are several versions, but in general, the dough consists of cubes of stale bread, milk and eggs, speck (or bacon) or cheese, parsley and flour. All the ingredients are mixed together to form balls of about 4-6 cm in diameter, which are then cooked in salted water and served with the broth.

Amatriciana is a pasta sauce that takes its name from Amatrice, a town in the province of Rieti that sadly made the headlines after the terrible earthquake of 2016. Although it originated elsewhere, it is considered a classic of Roman cuisine, and to prepare it you need guanciale (pork cheek) sautéed in dry white wine, tomato and pecorino cheese. Note: there is no garlic or onion and the pasta format for the original amatriciana is spaghetti! The dish originally comes from gricia, often called ‘amatriciana in bianco’.
