- Neapolitan Pizza | Naples
Officially recognised as a Traditional Speciality Guaranteed of the European Community and presented by Italy as a candidate for UNESCO recognition as an Intangible Heritage of Humanity, the Neapolitan pizza is one of the foods that most represents Italy around the world.
- Genoese Pesto | Genoa
Genoese PDO basil, extra-virgin olive oil (preferably from the Ligurian Riviera), Parmigiano Reggiano (or Grana Padano), Pecorino (Sardinian flower), pine nuts, garlic and salt are the undisputed protagonists of this tradition, and woe betide anyone who tries to replace pine nuts with walnuts!
- Florentine steak | Florence
The queen of Tuscan cuisine is undoubtedly the Florentine steak, the “fat” par excellence. For a good Florentine steak you need to pay attention to two things in particular: choosing an excellent cut of meat and cooking it rare… woe betide if you ask for it well cooked!
- Canederli | Trentino and Alto Adige
Canéderli (or Knödel in German) are meatballs made with stale bread and speck, served dry or in broth. There are several versions, but in general, the dough consists of cubes of stale bread, milk and eggs, speck (or bacon) or cheese, parsley and flour. All the ingredients are mixed together to form balls of about 4-6 cm in diameter, which are then cooked in salted water and served with the broth.
- Pasta all’amatriciana | Rome
Amatriciana is a pasta sauce that takes its name from Amatrice, a town in the province of Rieti that sadly made the headlines after the terrible earthquake of 2016. Although it originated elsewhere, it is considered a classic of Roman cuisine, and to prepare it you need guanciale (pork cheek) sautéed in dry white wine, tomato and pecorino cheese. Note: there is no garlic or onion and the pasta format for the original amatriciana is spaghetti! The dish originally comes from gricia, often called ‘amatriciana in bianco’. If you want to taste the best amatriciana in Rome come and visit us at Profumo Spazio Sensoriale, you won’t be disappointed with our chef’s comfort food proposals.
